Born and raised in Verona, Italy, William Perbellini began his hospitality career at age fourteen assisting his uncle at his bakery near Milan. Sensibly, he was not enamored with a life of 2 a.m. wake-up calls. Perbellini would eventually understand the dedication and sacrifice his future career would require.


He first stepped behind the bar in Verona at the age of eighteen. After graduating in 2002 from culinary high school as “gourmet bartender,” Perbellini recognized the hospitality profession as his calling and soon moved to Venezia to hone his craft among the best and brightest. He worked at the prestigious Hotel Cipriani for four years improving his bartending and hotel management skills. In 2007, Perbellini met Italian fashion icon Valentino while bartending at the Cipriani’s pool bar. The legendary designer recognized Perbellini’s style and strong work ethic and offered him an opportunity as butler for his proprieties and private yacht.


While traveling around the world with Mr. Valentino, Perbellini received the opportunity to move to California and help open an authentic Italian bar and restaurant in one of the best neighborhoods of Los Angeles. Then, in 2010, he met Mike and Kathie Gordon and joined their successful company to open the new Bar Toscana in the center of Brentwood. Perbellini brought his passion and signature touch to the crafted cocktail increasing the popularity of “aperitivo” and “digestivo” in the Westside.


William Perbellini’s name continues to grow. He is a member of the prestigious team, “Spirit of Italy”, representing Italian liquors at New Orleans’ annual Tales of the Cocktail convention. His craft cocktail recipes have been featured in several publications including: The Robb Report, Esquire, Zagat, Eater, The Tasting Panel, Huffington Post, LA Weekly and LA Confidential. His cocktail menu at Bar Toscana continues to evolve seasonally, while remaining true to the heart of Italian culture and spirit.
